Cauliflower steaks

Cauliflower steaks

A good vegetarian option and only 174 calories per serving!

Ingredients:

1 medium Cauliflower head

1 red bell pepper

1 tbsp of safflower oil

1/4 tsp of each salt and pepper

Step 1

Slice cauliflower into a few thick slices, should get 3. leave the rest in florets. Slice the red pepper into thick slices. Arrange on cooking sheet and brush with oil, then sprinkle salt and pepper. Cook at 425 until the cauliflower is soft and slightly browns on the bottom, about 20 min.

Sauce ingredients:

1 tbsp honey

1 tbsp malt vinegar or apple cider vinegar

1 tbsp ginger root, peeled and finely chopped

1 tbsp sodium reduced soya sauce

2 garlic cloves finely chopped

1 tsp dark sesame oil

1 tsp siracha or other hot chili paste

Step 2:

Combine all ingredients in a small bowl. Carefully flip the veggies, then spread the sauce over top. Place back in the oven for about 5 min. Garnish with green onions, cilantro and crushed peanuts if desired.
